Yummy Summer Cake - Lemon Drizzle

Just thought I would share a very yummy lemon drizzle recipe with those of you who don't know this delicious cake. It's perfect for summer as it's light and lemony and super simple to make!

For the Cake
225g sugar
200g butter at room temperature
4 eggs
225 g flour
1 tsp baking powder
1/2 tsp salt
zest of 2 lemons

For the Drizzle
85g sugar
juice of 1 1/2 - 2 lemons

1) Preheat oven to 180C (350F) or gas mark 4. Line a baking tin with parchment paper.

2) Mix together flour, baking powder and salt in a small bowl.

3) Beat together the butter and sugar until pale and creamy. Add the eggs, one at a time, mixing well between each egg.

4) Sift in the flour mixture. Add lemon zest and mix well.

5) Spoon batter into your baking tin and bak
e for 45-50 minutes (more or less depending on the size of your tin) or until a thin skewer inserted into the centre of the cake comes out clean.

6) While the cake is cooling, mix together the lemon juice and remaining sugar to make the drizzle.

7) Prick the warm cake all over with a skewer, then pour the drizzle over the warm cake. The juice will sink in and the sugar will form a topping. Leave in the tin until completely cool, then remove and serve.

I sure hope my daughter outgrows her egg allergy's mighty difficult to bake a cake without eggs. :\ But this cake sounds positively delicious, so maybe I'll just have to make it and hide it from her. More for me then, right?? ;D

Sorry about the conversions, I admit to having been a bit lazy (and this is one of the biggest reasons I haven't posted the Strawberry Charlotte recipe). I think 1oz is the equivalent of 30g (slightly less, 28g) if I'm not mistaken so 225g is about 1 cup. Hope that helps.
